Plant Based Christmas

Christmas time is always super busy at CFINE, but this is just the way we like it. We held two ‘Plant Based Christmas Cooking Classes’ with Nikki from The Liberty Kitchen in December. Both dates sold out very quickly, therefore we decided to catch those up in this blog post, who missed it.

The Liberty Kitchen

If you avoid eating animal products, cooking a Christmas feast for the family can be challenging. We teamed up with Nikki to provide support for those who needed inspiration before the holidays. Nikki’s pop-up café, The Liberty Kitchen, is famous for its sustainable, organic, healthy and delicious soups, meals, coffee and cakes, with plenty vegan options for those who follow a plant-based diet.

Cook at the 'Nook

Our Cook at the ‘Nook training kitchen, with 8 fully equipped work stations, accommodated both of the classes, providing enough space and a great experience for the participants. The cooking classes were 3 hours long and covered a full, 4 course Christmas meal:

Starter Orange & Carrot Soup
Main Mushroom Wellington with Roast Winter Vegetables and Red Wine Gravy
Cheese Homemade, Plant Based Nut Cheese
Dessert Avocado Chocolate Mousse

One of the participants says:

“The class was just brilliant! And the food was delicious and very plentiful - I will be eating Mushroom Wellington all weekend and I am pretty happy about that.

I have definitely learned a few new things and I will be bringing the recipes over to the in-laws to make a few things over Christmas. A big thanks to Nikki and CFINE for making it happen - it was a lovely class, and I’d be interested in any more that run in the new year.”

CFINE’s vision of the ‘Cook at the ‘Nook’ training and community kitchen is to operate as a social hub for people with similar taste and interest. Corporate team building, birthday parties, complimentary ‘Cooking on a Budget’ classes and tapas nights took place in our kitchen, to name but a few. We were excited to expand our repertoire with plant-based classes, as we truly believe in the significance of a sustainable and healthy diet.

Veg Cities

CFINE is the Aberdeen lead partner of Sustainable Food Cities’ ‘Veg Cities’ campaign, through which we aim to increase vegetable consumption in our city. For more information about the campaign, click here.
